Today, I want to focus on a vegetable. A vegetable that strongly divides people. Most people tend to have strong negative feelings toward this vegetable (especially kids!). I believe a consistent term I hear associated with it is ‘Yucky’. But, there is a sizeable minority that truly loves this veggie. I want to become a member of this minority who enjoys it.

Which vegetable am I talking about? Well, it’s no mystery if you’ve read the title of this blog post. Brussels sprouts.

Now, I have only had Brussels Sprouts a handful of times in my life. The first time I actually really enjoyed them. My friend had prepared these sprouts. They were a little salty and roasted so nicely. But, I have never been able to recreate this experience. Every time I try to make them, they are just absolutely gross. Tough, slimy, and just gross gross gross. I can’t myself eat more than one or two.

But, that changes now! I’m giving these veggies another chance.

And to do that, I am turning to the Barefoot Contessa Ina Garten and her simple recipe for preparing Brussels Sprouts (here is a link to her recipe). She really does have fantastic recipes, especially for baking.

All you have to do is take your sprouts, cover them with olive oil, salt, and pepper, and then roast them to a crispy brown. The only addition I made was to add a sprinkling of garlic powder for a little extra flavor. Now, here is where a picture of the finished project would be if I were a proper blogger. But, I got a little over-excited and may have been quite hungry. I couldn’t help myself by tear into the Brussels sprouts (along with my accompanying roasted chicken and asparagus).

I actually enjoyed them! They were slightly over-roasted, but I enjoyed the little crunchy bits and olive oil flavoring. Honestly, I was a bit shocked. I think having accompanying foods made it even better. These sprouts get a major thumbs up from Dr. F. Just make sure that you cook them through! Under-cooked sprouts are no good!
